4 medium bell peppers (various colors), about 600g
500g ground pork
1 medium onion, chopped, about 150g
2 cloves garlic, minced, about 6g
1 cup cooked cauliflower rice, about 150g
1/2 cup diced tomatoes, about 100g
1/4 cup chopped fresh parsley, about 15g
2 tablespoons olive oil, about 30ml
1 teaspoon dried oregano, about 2g
1/2 teaspoon salt, about 3g
1/4 teaspoon black pepper, about 1g
1/2 cup shredded mozzarella cheese (optional), about 50g
Cooking Instructions

- Cut the tops off the bell peppers and remove the seeds and membranes. Be sure to removeallseeds.
- If desired, parboil the bell peppers for 5 minutes to soften them slightly. This step helps them cook more evenly. Drain well.
