4 medium bell peppers (various colors), halved and seeded

500g ground beef (80/20)

1 medium onion, finely chopped

2 cloves garlic, minced

1 tbsp olive oil

140g diced tomatoes (canned)

50g cauliflower rice

30g shredded cheddar cheese (or mozzarella)

1 tbsp tomato paste

1 tsp dried oregano

1/2 tsp dried basil

Salt and pepper to taste

Optional: 2 tbsp chopped fresh parsley for garnish

Cooking Instructions

    1. Preheat oven to 190°C (375°F). Prepare the bell peppers by halving them lengthwise and removing the seeds and membranes.
