28g Coconut Flour
2 tsp Psyllium Husk Powder
1 tsp Baking Powder
1/2 tsp Salt
2 large Eggs, lightly beaten
85g Cream Cheese, softened
2 tbsp Olive Oil
For the Thai Chicken Topping:
225g Cooked Chicken, shredded
60 ml Keto-Friendly Peanut Sauce (check labels for sugar content)
1 tbsp Soy Sauce (or Coconut Aminos for a soy-free option)
1 tbsp Lime Juice, fresh
1 tsp Ginger, grated
1/2 tsp Garlic, minced
1/4 tsp Red Pepper Flakes (optional, for heat)
50g Shredded Mozzarella Cheese
2 tbsp Chopped Green Onions
1 tbsp Chopped Cilantro
1 tbsp Crushed Peanuts (optional, for garnish)
Cooking Instructions
Preparing the Flatbread Crust:
- Preheat oven to 175°C (350°F). Line a baking sheet with parchment paper.
- In a large bowl, whisk together the almond flour, coconut flour, psyllium husk powder, baking powder, and salt. This ensures even distribution of the dry ingredients.
- In a separate bowl, combine the eggs and softened cream cheese until smooth.
- Add the wet ingredients to the dry ingredients and mix until a dough forms. Add the olive oil and mix until well combined.
- Place the dough between two sheets of parchment paper and roll it out to a desired thickness, about ¼ inch. Aim for a roughly rectangular shape for the flatbread.
- Carefully transfer the parchment paper with the dough to the prepared baking sheet.
- Bake for 12-15 minutes, or until the crust is lightly golden brown. Watch closely to prevent burning.
Preparing the Thai Chicken Topping:
- While the crust is baking, prepare the Thai chicken topping. In a medium bowl, combine the shredded cooked chicken, keto-friendly peanut sauce, soy sauce (or coconut aminos), lime juice, grated ginger, minced garlic, and red pepper flakes (if using). Mix well to ensure the chicken is evenly coated with the Thai-inspired sauce.
- Once the flatbread crust is baked, remove it from the oven and carefully spread the Thai chicken mixture evenly over the crust.
- Sprinkle the shredded mozzarella cheese over the chicken.
- Return the flatbread pizza to the oven and bake for another 5-7 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and let it cool for a few minutes before topping with chopped green onions, cilantro, and crushed peanuts (if using).

Serve this Keto Thai Chicken Flatbread Pizza warm, cut into slices. The fresh herbs and crunchy peanuts add a wonderful textural contrast to the creamy cheese and flavorful chicken. This dish pairs well with a simple side salad dressed with a light vinaigrette to balance the richness of the pizza. Consider garnishing with extra lime wedges for those who prefer a zesty kick.
